American Idol Season 8 - Katrina Darrell

This woman's guts really shook up the judges on the opening of American Idols Season 8 in Phoenix, Arizona. Its not just for her bikini clad audition but the way she snapped "Your demonstration wasn't any better" to the new judge Kara Diogardi when she demonstrated how Katrina should have suppose to sing "Visions of Love" with a swing. Wahaa!! really made me laugh. Battle of the genders.

Niagara Falls at Night

I thought I could take a glimpse of this during the day and see the rainbow's end but I'm not disappointed ;o) its still as lovely during the night. I'll try to come back again so I can feature Niagara at all seasons.

Website: http://www.niagarafalls.ca
Address: Niagara Falls, ON Canada
Visit Map Location: View Map/Route

This is from the Canada side border - Horseshoe Falls which
drops about 173 feet (53 m) and are about 2,600 feet (792 m) wide.

Airflow over the falls causing layer of mist.

You can have complete views of the falls at the Canada side including the American falls on the US border ( not shown in picture ) since both falls face the Canadian shore. By this time its really freezing out there so be sure to be stuffed when you want to view it up close.

Recipe: Bicol Express

I've been craving for something spicy and luckily I had all the ingredients in the house to cook for this Filipino dish. This is a fave dish way back home popularized in the Bicol region.

Bicol Express (Bikol: Sinilihan) is a popular Filipino dish which originated in the district of Malate,Manila but made in traditional Bicolano style. It is a stew made from long chilies (siling labuyo in Tagalog, lada panjang in Malay/Indonesian), coconut milk, shrimp paste or stockfish, onion, pork, and garlic. It is said to have evolved from gulay na may lada, another Bicolano dish which is nowadays also presented as one of the many variants of Bicol Express.

2 tbsp cooking oil
1 tbsp minced garlic
1/2 cup minced onions
1/4 cup ginger fresh, chopped
1/4 kg pork thinly sliced
1 cup fresh hot green peppers (elongated variety, chili or jalapeno), sliced diagonally
1 cup fresh sweet red bell pepper sliced diagonally into 1/4 inch strips
3 tbsp sauteed shrimp paste
1 cup Baguio beans
2 cups coconut milk
Salt to taste

In a cooking pan, heat cooking oil and brown sliced pork for a few minutes. Set aside. Saute garlic in hot oil. Add onions and cook until translucent. Stir in fresh ginger, and the sliced cooked pork. Stir continually for 5 minutes. Add sauteed shrimp paste. Stir until the pork is completely covered by the mixture.Pour the coconut cream and add the sliced hot green and red peppers. Cook continuously until meat is tender and the coconut milk thickened. Add salt if necessary. Note: You can add up more chili and pepper as desired.

I don't repeat gossip, so listen carefully

I took this picture from the retail shop inside the lodge where we had our weekend vacation. Searched the web about it and i got a hit from this funny middle age attitude jokes. Just sharing some fun!

I don't repeat gossip, so listen carefully.

Lord, if I can't be skinny, let all my friends be fat.

My idea of cleaning the house is sweeping the floor with a glance.

If you don't like my attitude, call 1-800-Who Cares.

If it's true we are what we eat, I am either fast, cheap, or easy.

Your secrets are safe with me and all my friends.

Take my advice, I'm not using it!

You know you're getting old when you stop to think and forget to start again.

Mom, I'll always love you, but I'll never forgive you for cleaning my face with spit on a hanky.

I love to give homemade gifts ... umm, which one of the kids would you like?

I have a million dollar figure -- but it's all loose change!

I quit jogging for health reasons. My thighs rubbed together so much it caught my underwear on fire!

Great Wolf Lodge - Niagara

We had a great time with my husband and friends last weekend. We spent a night at the Great Wolf Lodge at Niagara. The place is really cool and awesome. Its a nice weekender treat specially for the family and kids. The suites are nice, clean, and comfy. There is an indoor and outdoor themed park but right now the outdoor is closed for the season. However the indoor water theme park is better since it offers more slides and pool areas. The pools are safe for kids and there are life guards all over the area. There is also a hot spa indoor and outdoor for adults. I enjoyed the outdoor hot spa, at first I thought its crazy with all of this snow outside and an outdoor spa... but I tried it and it's really great. I also didn't miss to ride all of the slides.

If you're done with water fun you can also check the other stuffs like the Scooops Kids Foot Spa and for the adults the Elements foot Spa. They also had an Arcade section. Cub Club for the kids where they hold party and free events. There are restaurants, coffee shop, and retails stores inside so you wouldn't need to worry. But if you're still looking for a stroll outside at night ... you can visit the Niagara falls or visit the nearby area at Clifton Hill. I definitely enjoyed my stay, the place and the service is good and would recommend it to everyone.

How to get there: View Map/Route

I went with my husband here for a dinner event. We went there on a Saturday night. They play live music usually every Saturday night from 9pm till closing. The lounge and bar area is separated from the main dining room. If you prefer a little bit of quiet ambiance don't go there on a Saturdays.

Grilled Striploin Steak

Tiramisu Cake

Chocolate Mousse Cake

I enjoyed the steak. The chocolate mousse would have been good but it's too frozen makes it very hard to eat. Service is good since this is a reserved dinner event. Just be prepared because it may be a little bit pricey. But for my overall dining experience it's good.
